Eggplant Mazza

This easy-tasty hors d’oeuvres  it’s vegan with simple ingredients you can serve it on top of toasted bread or with crispy sticks or crackers.

This recipe is for summer for your health use all veggies at their season please!

Okay let’s get started

1/2 cup organic eggplant (2 small eggplants or 1 big)

1 tbs extra virgin olive oil

1 tsp organic sea salt

1 tbs organic lemon juice

2-3 cloves organic garlic (optional but tasty)

Grill the eggplants on top of grill fire or in the oven

Before doing this please use knife  or use a fork just to make holes in eggplants this will help to stem escape and not exploding while you grill them.

After you grill them immediately remove them from oven and start to peel them for that you can hold them from their stalk if your fingers burning then just divide the eggplant lengthwise and remove the eggplants with spoon.

Immediately add the lemon juice this process will help them stay whiter and prevent them becoming brown.

After you peel them dice them finely or mash them and let them cool completely.

Put salt, and garlic.

Shape it.

Put some scallions or parsley on top drizzle with olive oil.

Hazelnut Cigars

Don’t you believe with this simple ingredients you could make very impressive cookies? Very nice recipe you don’t need a lot of confusing ingredients it’s simple but very tasty and I believe the most of the delicious and impressive things are simple.

It’s your turn to try and see how this simple recipe could turn to a very impressive taste when melting in your mouth.

175 gr. unsalted butter

100 ml. sugar

200 ml. finely grounded hazelnuts

300 ml. flour

2 tbs milk

For top

50 gr. chocolate semi sweet or bitter

Preheat oven 175 c

Mix sugar and butter

Add hazelnuts, flour and milk

Roll it to a finger thick long stick

Cut all of them 5 cm long

Put them on parchment papered pans

Bake them 10 min.

Take them from oven and let them cool completely

Melt the chocolate baine-marie style

Dip one side of them to chocolate

Put them on a rack to cool completely until the chocolate is set

I like more chocolate so I dipped both sides in chocolate but normally to make cigars should be one side dipped or if you don’t like chocolate then don’t dip them so do as you like.

Always use your creativity as much as possible then enjoy it!

Sesame Rolls

Baking love! I love baking-cooking it really makes me feel I don’t have any problems just if I will not get tired I think I will bake&cook all day. Let’s start the recipe.

For filling I use instead of parsley black olives you can use what you like if you don’t like cheese then just use olives or olive paste  to fill them.

125 gr unsalted butter melted

1 cup extra virgin olive oil

1 cup lukewarm milk 

1 cup lukewarm water 

2 eggs

2 tbs instant yeast

1 tbs sugar

1 tbs sea salt

flour

Filling

Feta cheese

Parsley

For top

1/2 cup water

1 tbs grape molasses

Sesame seeds

Stir all ingredients

Add as enough flour until you get form soft dough

Leave it 1 hour.

Take lemon size pieces

Open them with pin or hands

Put filling in center Roll them

Dip the top side of pies in molasses water then to sesame

 With sharp knife cut 2 or 3 cuts on top of each

Leave them 30 min on baking sheets.

Bake them in preheated oven at 200 until golden brown on top.

Quick Kourabiedes

IMG_0114Who don’t like or love easy, delicious and quick recipes?

For kourabiedes I had original one of course it’s tastier but it takes longer time to make this one guaranteed and very easy to follow and really delicious.

1 cup flour

3 tbs unsalted butter

4 tbs powdered sugar

1/2 cup  sliced  almonds

1 egg white

1/2 tbs baking powder

For the top as enough powdered sugar

Preheat oven 180 c degrees.

Put the almonds and flour in pan

Roast them until they turn pink

Cool them completely

Add all other ingredients

Knead until it takes form

Open it with pin 1 or 1.5 inches thick

Cut it with tea glass or moon shaped cookie cutter.

Bake them just when they start to turn pink.

Remove them from oven.

When they are lukewarm with help of shaker or strainer decorate them with powdered sugar or just roll them into powdered sugar.

It’s done ready to enjoy your kourabiedes as quick as you can!

Vegan Warm Salad

This is great for winter!

If you will ask is this salad really served warm?? Yes it is, it’s different and especially for winter time it’s warming and always nice to try something unusual isn’t it this is the way to learn end explore more.

While you are recycling every part of the food you are creating delicious, healthy dish!

When I’m buying veggies as today I did I removed all unused and old leafs or sometimes peels of vegetables as well you can use all kind of veggies like carrot peels beet leafs etc… but please be sure they are not poisonous or harmful for your health today the salad made from winter veggies. 

And please don’t forget to soak the veggies 1 hour in vinegar water before you use them!

You can reduce or add more it depend on how much old and unused leafs and parts you have.

3 red cabbage leafs

2  cabbage leafs

roots and leafs of broccoli

roots and leafs of cauliflower

2-3 tablespoons of extra virgin olive oil

1 tsp of salt

2-3 cloves of garlic diced (optional)

1 lemon juice

1/2 cup of boiling water

Cut all of the vegetables as you like

I like to cut them into thin stripes

add olive oil if you will use garlic add it with olive oil

add the veggies

start to stir them for 2-3 minutes

add boiling water

cover with lid cook for 2-3 minutes more or if you like them softer cook them 5 to 6 min.

Add the salt stir

At the end when you serve your warm salad add the lemon juice and stir.

Enjoy winter beauty with winter veggies!

Arugula Tomato Salad

I buy a lot of fresh fruit and vegetables I always do this here is the trick for you I soak them in vinegar water for 1 hour for this you need 1 lt. water and 2 tbs of vinegar I put all fruits and vegetables in and then rinse them that’s it. If they are very dirty rinse them before you soak them in vinegar water.

 

1 bunch of organic arugula

2 medium sized organic tomatoes

2 tbs extra virgin organic olive oil

1/2 tsp sea salt 

1 tbs organic pomegranate sour 

Cut arugula in 1 inch thick stripes

cut tomatoes in small cubes

Add salt 

pomegranate sour

and olive oil at the end 

Please for your health as much as you can buy organic and fair trade.

Traditional Organic Melon Seed Soup

This soup is amazing we need just 3 ingredients melon seeds, coarsely ground wheat and water that’s it! very easy to make at the same time very healthy I think this recipe is created when the people were short of food and using everything instead of throwing it away it is recycle recipe I love using every part of food not throwing it it’s very good habit to cultivate ( I usually collect the melon seeds by myself after cutting and eating the flesh of melon remove the seeds and wash them with help of a strainer then put them on plate and sun dry them) and especially buying and cooking small amount of food is better than buying and cooking a lot and then throw it to the garbage please buy and cook with awareness  don’t forget there is many people who can’t even find what you throw to the garbage!

Less is more and healthier, cheaper and better.

2 cups organic sun dried water melon seeds unsalted

2 cups coarsely ground wheat

1- 1/2  lt water

cinnamon, sugar, salt optional

Rinse the coarsely ground wheat

Add 1 lt water soak it 30 min.

Boil it 40 min or until cooked well and begin to get thick.

Roast the melon seeds for 10 min or less they shouldn’t change their color.

After 10 min. grind them very well they should be powdered.IMG_0676

Boil 1/2 lt. of water add half of the water on powdered melon seeds and stir until it’s very white

Take strainer over the well cooked coarsely ground wheat pour the melon seeds milk from strainer.

Repeat the same thing with remaining water.

drain it well.

These are the words that I love a lot saying what I can’t say sometimes when I confused or sad or mad or even happy  they teach me something that I didn’t think before THANKS a LOT for putting all the letters and words in this beautiful meanings.

I just would like to share them with anyone who finds something from itself.

Hope coming near to the end of this year our worries, disappointments bad experiences and all sort of that we call bad or negative was in our life just to change us to be better person and to make us able to see the life with different perspectives to enlighten our minds and hearts to see what was missing from our lifes.

Profiterol from scratch!

As like me do you think it’s very hard or impossible to make this delicious filled puffs called profiterol because at Istanbul at Inci Profiterol I ate many times this delicious profiterols and every time I ate them I think they are the best profiterols around the world! but when I ask myself how can I make them or at least is it possible to make them at home? The answer was Oh impossible!

Until I tried to make them from scratch very surprisingly  they were very easy to make and this one is guaranteed recipe. When I was serving this to my family and friends always asking me where I bought them but the truth is I made them at home! even still I can’t believe that I can make them at home from scratch.

So here it’s the recipe for you to try and see!

For Puffs

1 cup water

1/2 cup butter

1/4 tsp salt

1 -1/4 cups flour

4 large eggs at room temperature

For Filling

1- 1/2 cups heavy cream or whole milk

1 teaspoon vanilla extract

1 small box instant vanilla pudding mix

For Chocolate

1/2 cup sugar

2 tbs flour

1 tbs full cocoa powder

1 cup milk

Chocolate

Put all ingredients in pan stir occasionally, boil (3-5 min.)until it gets thick.

Fillig
Stir all ingredients together until you have thick filling.

Let it set 1 hour in refrigerator or you can prepare it one night before.

The Puffs

preheat oven 200 degrees.

Combine water, butter and salt in medium pan heat until butter melted.

Bring to rolling boil.

Add flour all at once stirring vigorously until smothes out and flows the spoon around pan. (this should take less than 30 seconds)

Remove it from heat cool it 5-10 min. it should be lukewarm.

With mixer beat the eggs one at a time in lukewarm mixture after adding the last egg continue beating 1 minute more.

Take 1 teaspoon full of the dough and drop it on parchment papered pans leave 1 inch between the puffs.

bake them 20 min. when they turn medium golden brown.

Remove them and cut a slit into the sides of puffs.

Return them to oven cook them 5 min. more.

Remove them and let them cool on a rack.

Gently open each puff alone natural fault line.

Fill bottom with 2 teaspoons of filling and replace with the top half.

Put all filled puffs on serving plate pour the chocolate on top put it in refrigerator.

Enjoy with loved ones !
