What is real. beautiful. important. worth? health.wealth.success. death? End or beginning? What you mean when you live? or living without a mean? Only when you are sick  you remember? Only when you are needy remember? Only when no one remember you, you remember? The death when alive? or the death and the end or the new fresh start? Can not tell enough how sad. how hard. how bad. how you feel. only you know and if you believe God too. When you know it is time to say good bye and leave loved ones behind, connected more than ever stronger than anytime.

When only real and new change. life. age. body. soul………dimension. Change starts.

Still asking why we are still here? maybe not enough. not completed. still waiting for New life. love. dimension .change.

To think or not to think

I know this title is pretty familiar. I wonder how many of you is not familiar with lifes difficulties? Are there any people there? I really will be very surprised or really happy for them. Im pretty sure many of you faced this difficulties in some phases of your life or still facing or unfortunately you will rest of your life and during those difficult times maybe or most of the times we thought we were the only one or maybe not only one but most helpless one or even we felt no hope all darkness and sometimes even we tried and tried again but it didn’t work you tried to get help from most closest friends and family but doesn’t work and even was worser because during all that chaos you lost your faith you lost your kind thoughts you lost your trust you lost YOU. Actually while all this happening, for some people this takes few days or months for some few years for some 10 years for some20-30 or all their life. Sometimes you get really tired from trying and you start to think is it worth it to live is it worth to live in such world is it worth to even think and think and think over over and over again until you feel dizzy, sick, nothing but earth but again you start to think why you have to live in war in injustice in lot of work but even not enough to eat or live while others can or you can but others cant why??? etc… etc… again. You start not to think act like there is no such thing like that even you are drowning by problems you are not excepting them telling yourself you are all right you are strong you are well trying not to think over over over and over again.

And maybe this is the only way the dead end of how to live in this world from the beginning until end.

To think or not to think

To  learn when you should stop and what kind of thoughts you allow in your network changes everything to became expert is not easy it takes a lot effort its a skill like when you learn a new language or any skill with practice gets better and better… sure you will fail thousands of times but this is totally ok. Don’t forget you need just yourself to do that no one else because no one else will live behalf of you take care and try to close your ears to those clogging you and just trying to destroying you instead building so its better to stay away even you will stay all alone because its better to stay true to yourself than lying to gain others.

Farm to Table Dinner Event

End of Summer is on the horizon.  We try to celebrate the season in every way possible before the cold and snow hits the streets.

Campo Di Bella farm and winery hosted a wonderful vegetarian dinner event last night. We had the joy of attending it.  

What a fantastic way to support local farming community and artisans. 

29 guests, 7 courses, and a lot of joy…


Every course was light refreshing and made us taste the summer sunshine!

Another spa another different experience!

From different kind of massages we choose the one with karite butter candle which heals the skin and of course with our luck we meet Rosy and her experienced hands they know exactly how to massage not too hard not too light just as it should be and her positive energy also change the athmosphere and how you feel, her smile too was relaxing and of course the warmth of melted  karite butter was amazing.

Rosy’s special karite butter treatment started with emotional shower then continued with bagno turco (hamam) and sauna then soaking in jacuzzi….

Spa Salus PerAquam – our respite in Lecce, Italy

Our long time followers know about our Spa addiction. We have been in Spa’s around the world.  See our past blog entries for Maldives, Seattle, Kohler, Thailand, etc…

In Lecce, we have been walking everywhere. When you walk all day long and have fun it’s important to rest and treat your body well. It will pay you back!

Our hotel Risorgimento Resort luckily for us has a lovely spa. It is perfect for after a long day of site seeing and travelling.  We recommend that you book at least a day ahead. 

Our favorite spa expert is Monica Valiani – ask for her by name.  She speaks Italian, English, French, and German.  We had spa services with her for two days and it was simply excellent. 

 

Turkish Bath (Bagno Turco) after a good salt scrub on the entire body transforms your senses and starts the relaxation process. The emotional shower (rain, breeze) with special light therapy completes the whole treatment. We left clean, relaxed, and energized for our dinner party.

 
Next day we returned for facial and the special Cinque Sensi massage created by Monica. She designed this massage based on chackras. We loved it and our faces were radiating after the facial.  If you want a couples massage ask Monica for her signature massage designed for couples. 

The prices are middle range. For a great 50 min massage we paid €80. The Bagno Turco was €20. They have manicures, waxing, and many other facial and body treatments. You can also request something more tailored for your needs. 

The spa is small but tranquil and you can reserve it for privacy. You will be surrounded by unobtrusive service and positive energy.

Bone Broth Anyone?

On bitter bitter cold nights one sure way of warming up is a delicious bowl of bone broth. as the temperatures dropped so did my tolerance for the cold. So I bought a pound of beef bones from my neighborhood hunting based organic butcher.

With a friends help I set out to make bone broth. It is one of the best and easiest things to make. Besides being good for your health it becomes a great base for many soups, rice, and other dishes.

Let’s get started: a pound of bones, 2 carrots, 1 large onion, a bunch of parsley, 2 bay leaves, 5 whole all spice pieces, 2 stalks of celery, half a cup of apple cider vinegar, water to cover.

You will need a pressure cooker!!
Yes, without it you might be boiling this for days.

Roast the bones in the Owen for 30-40 minutes, then put them in the pressure cooker, coarsely chop and add the veggies and cider vinegar. Then add the spice and bay leaves. By the way you can improvise and add other spices if you like – but remember if you want to use this in cooking other meals having it plain is best. And yes… there is no salt added for the same reason.

Once you have everything in the pressure cooker add water to cover the bones. You are now ready to cook!!! it will take roughly 4-5 hours and the aroma will fill your kitchen. This will make 2 large tubs of broth and I recommend you freeze them so you can keep on using the broth without spoiling it.

You are probably wondering why vinegar?? It helps bleach the nutrients and the marrow out of the bones more easily. Helps make the broth richer. You can adjust the quantity of how much you use as long as you use some.  IMG_3357We watched a romantic comedy, laughed, and had couple of glasses of Champaigne while the pressure cooker did all the job! Result was just yummy and its a gift that keeps on giving on these cold cold nights. Hope you give it a try! Cheers!!

Weekend Cooking: Stuffed Stuff

Love weekends when we can fully relax and cook savory cozy meals that speak to the soul and heart.

This is a favorite dish especially for cold winter nights. Yet so easy to make, but sure to delight the senses.

Ingredients:
2 small yellow peppers
Couple medium sized zucchinis
4-5 medium sized firm tomatoes
1 lb Organic ground beef
1 cup of Organic jasmine rice
3 cloves of fresh pressed garlic
Salt
Olive oil
Black pepper
Red pepper
All spice
Crumbled feta for the top

Was the veggies and hollow them out. Careful not slice your hands open or cut through the veggies. You need both 😉 to enjoy this meal. Using a small melon baller might help, but I use a nice small sharp knife. Goal is to hollow the veggies without damaging the shell that will keep the stuffing.

Put hollowed veggies in a container of water and salt mixture (brine) while you mix up the stuffing.

Best beef for this is organic and semi fat. Don’t go lean – the dish with be way too dry and tasteless. For vegetarians; omit the beef and use a coarse chop of the hollowed out innards, add mushrooms and viola! Turn the oven on to 475 degrees and get your baking dish ready.

Mix up the beef with spices, rice, and pressed garlic. Use as much spices to your liking and diet. Drizzle olive oil as you are mixing the stuffing – again amount is up to you. We love bathing in it so we go wild!

Stuff each veggie somewhat loosely to allow for the rice expansion as it cooks. Place the veggies upright. Once done stuffing them all. Pour a lukewarm water at the bottom of baking dish – just enough to come up to quarter of the height. With a spoon carefully put some of the lukewarm water into each veggie as well – makes for more moist stuffing.

Cover up the baking dish with a parchment paper to help it steam while cooking and keep the moisture. Bake for 40 minutes. Then turn off the over, put crumbled feta on top of each veggie and broil till feta is pink and melty.

Pull out let it cool for 2 minutes and serve up!!
